High in protein, loaded with fresh veggies, and made in one bowl. This recipe is a family favorite and a staple in my house!

CHICKEN MEATBALLS
Description
High protein, low-fat, and full of veggies, these easy meatballs freeze beautifully and always come out great!
Ingredients

- 1 pack of ground chicken
- 1 cup low-fat cottage cheese
- 2 eggs
- ½ cup breadcrumbs
- 1 head of Italian parsley, finely chopped
- ½ onion, finely chopped
- 2-3 carrots, grated on a box grater
- 1 tsp each of paprika, oregano, thyme
- salt and pepper to taste
Instructions
- Add all ingredients to a bowl and mix well. The batter should be thick and mold able.
- using an ice cream scooper, scoop out batter and form into ball with hands.
- Heat a cast iron pan over medium/high heat and spray with avocado oil spray.
- Arrange meatballs in pan. Turning several times during cook to ensure all sides get browned and crispy.
- They are done when internal temp reaches 165. This takes a few minutes!
- Enjoy right away or cool before freezing for longer storage!
