Try these once and get as hooked on them as we are. They’re light, perfectly sweetened with coconut sugar and apple sauce, and are so easy to make that a toddler can do it!
HEALTHIER CINNAMON SUGAR DONUTS
INGREDIENTS
- 2 eggs
- ½ cup pumpkin
- ½ cup apple sauce
- ½ cup coconut sugar
- 1 tsp vanilla
- 1 tbsp pps or cinnamon
- 1 tsp baking soda
- 2 cups almond flour
- ¼ cup arrowroot
- ¼ cup coconut flour (or sub more almond)
MAKE IT
- Preheat oven to 350F.
- In a bowl, mix eggs, coconut sugar until creamy.
- add in apple sauce, vanilla, and mix again.
- Add all dry ingredients and mix.
- Spray a mini muffin tray with oil.
- Pour batter into a ziplock bag and cut a small edge off so you can pipe the mixture into the muffin tray. Fill each mini muffin cup about ¾ of the way.
- Bake for 20 minutes or until a fork inserted in the middle comes out mostly clean.
- Brush a thin layer of melted butter (or milk if you’re avoiding butter) and roll in coconut sugar.
