This is a super quick pasta recipe for when you don’t feel like cooking, and you want pasta and the kids are hungry, and a million things are going on at once.
I use this pasta recipe as a base as adjust based on what veggies I have that need to be used up or what flavors I craving. It has protein, fiber, and all the coziness.
LAZY CARROT CHICKEN PASTA
- 3-4 carrots, chopped
- ½ onion, chopped
- 1 lb ground chicken breast
- 3 tbsp concentrated tomato pasta
- 1 tsp each garlic powder, onion powder
- salt + pepper to taste
- 1 cup water
- ½ box pasta of choice
- Parmesan (optional, to top)
MAKE IT
- Boil pasta according to instructions on box.
- In a pan on medium/high heat, add onion, carrot and ½ cup water. Simmer until most of the water has evaporated and the vegetables are softened.
- Add in ground chicken, tomato paste + garlic + onion powder, salt + pepper.
- Add ½ cup water. Cook while mixing until chicken is cooked through.
- Mix pasta with sauce and serve. Top with grated Parmesan for extra flavor and protein.
