Healthier Hash Browns

HEALTHIER HASH BROWNS

  • 1 bag frozen shredded potato and carrots (if you don’t have this, use about 2 cups shredded yellow potatoes and 1 cup shredded carrots)

  • 1 teaspoon sea salt

  • 1/4 cup all purpose flour

  • 1 tbsp arrowroot flour (or can sub cornstarch)

  • 1 tbsp water

  • Olive oil for pan

MAKE IT

  1. In a large bowl, add veggies, salt, flour, arrowroot (or cornstarch), and water and mix well.

  2. Place in fridge to set for at least 20 min.

  3. In a large pan, heat olive oil or avocado oil on medium/high heat.

  4. Form dough into patties and place on pan.

  5. Cook for about 2 minutes on each side or until browned and crispy.

  6. Place on baking sheet to cool.

  7. I like to top mine with avocado and tuna! Enjoy :)
