PROTEIN BROOKIE

High in protein, fiber, and healthy fats, this brookie doesn’t disappoint!

INGREDIENTS

  • 1/2 cup almond butter (or peanut butter)

  • 1 cooked sweet potato

  • 1/3 cup maple syrup

  • 1 egg

  • 1 tsp vanilla extract

  • 1/2 cup almond flour

  • 1/4 cup protein powder (can omit this!)

  • 1 tablespoon baking powder

  • 1/4 cup cacao powder

  • 1 protein bar

MAKE IT

  1. Preheat oven to 350F.

  2. In a bowl add all wet ingredients and mix.

  3. Add in all dry ingredients and fold to incorporate.

  4. Crumble cookie protein bar on top of the batter and mix it in.

  5. Place batter in a baking dish and bake for about 15-20 minutes or until a fork comes out mostly clean.
