PROTEIN EGG SALAD

Higher in protein, so much flavor, and super easy to throw together on even the busiest of mornings. Also love this for meal prep.

PROTEIN EGG SALAD

  • 3 boiled eggs

  • 1/2 cup cottage cheese

  • 1/4 head parsley, finely chopped

  • 1/2 tsp paprika

  • Sprinkle each of: garlic powder, onion powder

  • Salt and pepper to taste

MAKE IT

  1. Chop boiled eggs until they’re as small as you like them. I prefer mine a little chunky, so I never use a grater, always a knife to chop them.

  2. Add in all other ingredients and mix well.

  3. Enjoy on sourdough toast or alone. Keeps well in the fridge for several days!
