PROTEIN EGG SALAD
Higher in protein, so much flavor, and super easy to throw together on even the busiest of mornings. Also love this for meal prep.
PROTEIN EGG SALAD
3 boiled eggs
1/2 cup cottage cheese
1/4 head parsley, finely chopped
1/2 tsp paprika
Sprinkle each of: garlic powder, onion powder
Salt and pepper to taste
MAKE IT
Chop boiled eggs until they’re as small as you like them. I prefer mine a little chunky, so I never use a grater, always a knife to chop them.
Add in all other ingredients and mix well.
Enjoy on sourdough toast or alone. Keeps well in the fridge for several days!
