CARAMEL FUDGE PROTEIN BROWNIES

Description

One bowl, high protein caramel fudge sweet potato protein brownies for a week of stable energy snacks and high protein desserts! 


Ingredients

Scale
  • 1 boiled or baked sweet potato
  • 1/4 cup maple syrup or honey
  • 1/4 cup almond butter (Georgia grinders is my favorite)
  • 2 eggs
  • 1/4 cup collagen powder
  • 1/2 cup cacao powder
  • 2 tbsp flax meal
  • 1 tsp cinnamon 
  • 1/2 cup cacao powder
  • 1 cup oat flour 
  • 1/4 cup fudge (I use Coop’s fudge)
  • 1/4 cup caramel sauce 

Instructions

  1. Peel sweet potato and smash it with a fork. You want it pretty smooth. 
  2. Add all well ingredients and mix. 
  3. Add dry ingredients to the mixture and mix again. 
  4. Place in an oven safe baking dish (like a Pyrex).
  5. Dollop in the fudge and caramel sauces, and swirl around with a stick or fork. 
  6. Bake for about 25 minutes or until a knife can be inserted and comes out mostly clean. (You want the sweet spot of done-ness, not overd or under.
  7. after it cools, cut into slices and store in the fridge for a week of easy afternoon snacks or late night, blood sugar stable treats!
