Description
One bowl, high protein caramel fudge sweet potato protein brownies for a week of stable energy snacks and high protein desserts!
Ingredients

- 1 boiled or baked sweet potato
- 1/4 cup maple syrup or honey
- 1/4 cup almond butter (Georgia grinders is my favorite)
- 2 eggs
- 1/4 cup collagen powder
- 1/2 cup cacao powder
- 2 tbsp flax meal
- 1 tsp cinnamon
- 1/2 cup cacao powder
- 1 cup oat flour
- 1/4 cup fudge (I use Coop’s fudge)
- 1/4 cup caramel sauce
Instructions
- Peel sweet potato and smash it with a fork. You want it pretty smooth.
- Add all well ingredients and mix.
- Add dry ingredients to the mixture and mix again.
- Place in an oven safe baking dish (like a Pyrex).
- Dollop in the fudge and caramel sauces, and swirl around with a stick or fork.
- Bake for about 25 minutes or until a knife can be inserted and comes out mostly clean. (You want the sweet spot of done-ness, not overd or under.
