Ingredients
Scale
For the Cake:
- 5 tbsp grassfed butter, softened or melted
- 1/2 cup coconut sugar
- 2 bananas
- 2 eggs
- 2/3 cup apple sauce
- 1/2 cup Greek yogurt
- 1 1/2 tbsp vanilla extract
- 1 3/4 cup spelt flour
- 1 tsp Baking soda
- 1/4 tsp salt
- 2 tbsp cinnamon
For the Cream Cheese Swirl:
- 1 container of cream cheese (I use Green Valley Lactose Free)
- 2 tbsp cup coconut sugar
- 1 egg
- 1/2 tsp vanilla
- 1/4 cup flour
Instructions
For the Cake
- In a bowl, mix softened or melted butter with coconut sugar. Add all other wet ingredients and mix again.
- Add all dry ingredients, mix.
For Cream Cheese Swirl
- In a bowl, mix all ingredients together with a whisk or beater.
Assemble and Bake
- Pour half of the cake mix into a glass baking dish.
- pour in the cream cheese swirl mixture
- Add the rest of the cake mix.
- bake at 350 for about 1 hour or until a fork comes out mostly clean.
- Let cool and enjoy. Can store in the fridge for several days
