CREAMY TURKEY POTATO SOUP

  • 1 package ground turkey breast

  • 1lb baby potatoes

  • 3-5 carrots

  • 1 onion

  • 1 cups baby green peas

  • 4 cups quality bone broth

  • 1 head of kale

  • 1 package cream cheese

  • Salt + pepper to taste

MAKE IT

  1. Chop all veggies. I like to halve the baby potatoes and chop the rest of veg small.

  2. In a large pot on medium heat, add olive oil and veggies. Cook until slightly softened.

  3. Add in Italian seasoning.

  4. Add in ground turkey. Sauté until cooked through.

  5. Pour in the bone broth and chopped kale.

  6. Bring to a boil then reduce heat to low and let simmer for about 20 min.

  7. Take off the heat and add in one container of cream cheese.

  8. Using an immersion blender, blend until halfway smooth.

  9. Enjoy :)
