Easy Butter Chicken

EASY BUTTER CHICKEN

  • 3 chicken breasts, cubed

  • 1/2 cup Greek yogurt

  • 1 tsp salt + pepper

  • 1/2 tsp garam masala + 1/4 tsp cinnamon + 1/4 tsp cumin + 1/4 tsp coriander

  • 1 large can crushed tomatoes

  • 1 can full fat coconut milk

  • 1 onion, chopped

  • 1/4 cup butter

  • Salt + pepper to taste

  • Rice for serving

MAKE IT

  1. Marinate chicken cubes in the Greek yogurt and spices.

  2. Add 2 tbsp butter to pan on medium/high heat and add the marinated chicken.

  3. Cook until done and remove chicken from pan while you make the sauce.

  4. In your pan, add the rest of the butter, onion, sauté.

  5. Add the crushed tomatoes, coconut milk and salt to taste.

  6. Stir well and bring to a simmer.

  7. Add cooked chicken to sauce.

  8. Serve with rice. Squeeze fresh lemon on top for brightness (really adds a nice level of flavor!)
