GRINDER SANDWICH

Less carbs, more protein, sooooo much flavor.

This is the sandwich of my dreams because it still has all of the components I want in a really good sub or melt (bread, meats, cheese, sauce) but it ups the nutritional factor and keeps blood sugar more balanced by taking out the bulk of bread in the middle and adding in more protein and fiber in its place.

But you don’t notice or miss it AT ALL! Promise :)

GRINDER SANDWICH

  • 1 ciabatta roll

  • 4-5 slices turkey deli meat

  • 3 slices American cheese

  • 1 tomato, sliced

  • 1/2 cup iceberg lettuce, shredded

  • 2 tbsp mayo (I use Chosen foods because it doesn’t have inflammatory seed oils)

  • 1/4 cup nonfat Greek yogurt

  • 1 tbsp stone ground mustard

  • 1 tbsp lemon juice

  • Salt and pepper to taste

MAKE IT

  1. Cut ciabatta roll in half, lengthwise. Using your fingers, remove most of the inside of the sandwich bread, leaving just the crust and a little bit of the inner part.

  2. Layer bread with turkey, cheese, and tomato.

  3. Toast in over or toaster oven until cheese has melted and bread is toasty.

  4. In a bowl, combine shredded lettuce with all dressing ingredients and mix well.

  5. Top sandwich with lettuce filling. Enjoy! ☺️
