SOURDOUGH FOCCACIA

If you as me, this sourdough focaccia is the best way to use up sourdough discard.

The easiest focaccia recipe using your leftover sourdough discard.

SOURDOUGH FOCCACIA

  • 1 cup sourdough starter

  • 2 cup warm water

  • 2 tsp salt

  • 4 cups all-purpose flour

MAKE IT

  1. In a large bowl, add starter, water, and flour. Mix until a sticky dough forms.

  2. Knead for several minutes until the dough feels elastic.

  3. Form into a ball and cover for about 10 hours. In cooler months, this may take a little longer.

  4. Uncover dough when it’s almost doubled and place the dough into a baking dish that has been brushed generously with olive oil to prevent sticking.

  5. Spread the dough out in the baking dish and let rise again for 2 hours.

  6. Top the dough with a generous coating of olive oil and make little holes in the top using your fingers, this is what gives the bread the signature FOCCACIA look.

  7. Sprinkle rosemary on top.

  8. Bake at 400 until golden on top and cooked through. About 20 min.
