HEALTHY BANANA PUDDING

No stove needed. This easy banana pudding is be made in minutes, has all of the nostalgic flavor and is so much better for you than the original!

  1. 2 bananas

  2. 1 cup thick Greek yogurt

  3. 1/4 cup full fat coconut milk (make sure you use full fat, this is going to help the pudding have a thick consistency

  4. 1/2 teaspoon vanilla extract

  5. 2 tsp coconut sugar or sweetener of choice (you can use maple syrup but it will make the consistency thinner)

    for layering:

  6. wafer cookies

  7. 1 banana

make it

  1. In a blender, blend all pudding ingredients until smooth.

  2. In your dessert glass or cup, layer a few wafer cookies, then pudding, followed by wafer cookies and bananas, then pudding again, and top with wafer cookies.

  3. Set in the fridge at least 1 hour, 2 is even better! Enjoy :)
