mediterranean summer salad (no lettuce)

A lettuce free (and therefore meal prep friendly) summer salad that’s as addictive as it is nourishing. Love pairing it with chicken breast for an easy, light balanced meal.

  • 1 head parsley

  • 1 cup green olives (or 1/2 cup green, 1/2 cup Kalamata)

  • Handful of fresh mint

  • 1 pint cherry tomatoes

  • 1 English cucumber

  • 1/2 cup feta cheese

Vinaigrette

  • 1/4 cup sherry wine vinegar (can use red wine vinegar)

  • 1/3 cup olive oil

  • 1 tsp Dijon mustard

  • Salt + pepper to taste

make it

  1. Chop all veggies and herbs finely.

  2. Add to large bowl and crumble the feta on top. Mix gently.

  3. Make the vinaigrette: add all ingredients to a bowl and whisk really well.

  4. Pour on top of salad. Enjoy :)
