HEALTHY MANDARIN LEMON MUFFINS
3 eggs
1 cup green yogurt
1/3 maple syrup
1/4 cup mandarin juice
1 teaspoon vanilla
4 cup almond flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Zest of 1 mandarin (or orange) and 1 lemon
MAKE IT
In a large bowl, add eggs, yogurt, maple syrup, vanilla, and juice. Mix really well!
Add in almond flour, baking powder, baking soda, salt, and zest. Mix to incorporate.
In a lined muffin tin, add an ice cream scoop of batter to each muffin cup.
Bake at 350F for about 25 minutes or until a fork comes out clean.
