HEALTHY MANDARIN LEMON MUFFINS

  • 3 eggs

  • 1 cup green yogurt

  • 1/3 maple syrup

  • 1/4 cup mandarin juice

  • 1 teaspoon vanilla

  • 4 cup almond flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • Zest of 1 mandarin (or orange) and 1 lemon

MAKE IT

  1. In a large bowl, add eggs, yogurt, maple syrup, vanilla, and juice. Mix really well!

  2. Add in almond flour, baking powder, baking soda, salt, and zest. Mix to incorporate.

  3. In a lined muffin tin, add an ice cream scoop of batter to each muffin cup.

  4. Bake at 350F for about 25 minutes or until a fork comes out clean.

  5. Enjoy :)
