LIGHTENED UP BUTTER CHICKEN

Lightened up Butter Chicken

  • 3-4 chicken breast, cut into cubes

  • 1 onion, diced

  • 2 tbsp tomato paste

  • 1 large can of crushed tomatoes (I use fire roasted for more flavor)

  • 1 can full fat coconut milk

  • 1 tbsp garam masala

  • Salt + pepper to taste

  • 1 cup rice, cooked

MAKE IT

  1. To a large pan on medium heat, add butter and onions and cook until translucent.

  2. Add cubed chicken and slightly brown sides.

  3. Add spices, tomato paste, crushed tomatoes and simmer on medium until chicken is cooked through.

  4. Add coconut milk and reduce heat to low.

  5. Salt to taste and enjoy over rice with a squeeze of lemon.
