TRIPLE PROTEIN ONE POR PASTA

Not doubling the protein, but TRIPLING IT. Yea, it might sound like it has to be a trick or something, but just trust me on this.

Why? Well I like cozy comfort meals as much as you do. And I’m on a mission to make them healthier and more balanced for our bodies. And this particular one is on a regular rotation around here. It’s really delicious and such a simple meal to put together!

TRIPLE PROTEIN ONE POT PASTA

  • 1 box of your favorite protein pasta

  • 1 onion, chopped

  • 2 tbsp tomato pasta

  • Salt + pepper to taste

  • 1 teaspoon chili powder (optional, adds a little kick)

  • 1 container low fat cottage cheese

  • 1 lb ground chicken

  • 1 cup shredded mozzarella cheese

MAKE IT

  1. Cook pasta according to directions on box.

  2. Add chopped onion to a large pan with olive oil and sauce until translucent.

  3. Add in ground chicken and spices. Cook on medium/high heat until chicken is cooked through.

  4. Add tomato paste and mix.

  5. Make your heavy cream sauce by blending cottage cheese until smooth. Add a tiny bit of water if necessary to get it to blend. (I didn’t need to)

  6. Add heavy cream sauce to the pan and story to incorporate.

  7. Fold in cooked pasta, top with mozzarella cheese and stir together.

  8. Serve with shaved Parmesan and fresh parsley. Enjoy :)
