CHICKEN MANGO SALAD

Chicken Mango Salad

DRESSING:

  • 1/4 cup mayo

  • 1/4 cup Greek yogurt

  • 1 tbsp Dijon mustard

  • Juice of 1/2 lemon

  • 2 dill pickles, chopped tiny

  • Salt + pepper to taste

CHICKEN MANGO SALAD

  • Chicken breast, cooked

  • 1 mango, chopped

  • 1 head romaine lettuce, chopped

  • 1/4 cup shaved Parmesan

MAKE IT

  1. Make the dressing by adding all ingredients in a bowl and mix.

  2. To make pan fried chicken: butterfly slice chicken breast. Coat in eggs then in panko breadcrumbs. Pan fry in a little avocado oil until cooked through. chefs kiss!

  3. Add chopped romaine, mango, chicken to bowl and toss with the dressing. Top with Parmesan. Enjoy :)
