Healthier BB ancient grain chocolate chip cookies

  • 1/2 cup butter

  • 1/2 cup coconut sugar

  • 1/2 cup maple syrup

  • 2 eggs + 1 yolk

  • 2 tsp vanilla

  • 1 tbsp kefir

  • 2 3/4 cup spelt flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 cup dark chocolate

Make it

  1. Make brown butter by melting butter in pan until it starts to turn golden brown and smells fragrant. Remove from heat.

  2. In a large bowl, mix brown butter, coconut sugar, maple syrup.

  3. Add in eggs and vanilla.

  4. Add all dry ingredients and chopped dark chocolate.

  5. Place batter in fridge for about an hour to firm up. This makes it much easier to handle and it spreads nicer.

  6. Preheat oven to 325F

  7. Scoop out cookie dough in about 2 tbsp each sizes and place on a baking sheet.

  8. Bake for 9-11 minutes depending on your oven.
