Healthy Banana Bread Muffins

HEALTHY BANANA BREAD MUFFINS

  • 3 ripe bananas (the more ripe, the sweeter your muffins will be. Since we aren’t using any other sweetener in this recipe, I recommend to make sure you use ripe bananas!)

  • 2 eggs

  • 1 1/4 cup almond flour

  • 1 tbsp baking soda

  • 1/4 tsp salt

  • 2 tbsp almond butter (optional for swirl)

  • Dark chocolate chips for topping (also optional, but delish)

MAKE IT

  1. Preheat oven to 350F. Mash banana in bowl and add eggs. Mix.

  2. Add in almond flour, baking soda, and salt. Stir to incorporate.

  3. Scoop into a lined muffin tin about 3/4 full. Top with almond butter if using, and stir in with a fork to make a swirl.

  4. Top with dark chocolate.

  5. Bake for 20 minutes or until a fork inserted comes out mostly clean.

  6. Enjoy! :) these last for about 4-5 days in the fridge. Awesome for a sweet treat meal prep!
