MEDITERRANEAN POTATO SALAD
1 pound baby potatoes
1/2 head of fennel, stems only
1/2 bunch fresh dill
Handful of fresh mint
3 baby cucumbers
3/4 cup labneh
Squeeze of lemon juice
Salt + pepper to taste
MAKE IT
Boil potatoes until fork tender. Transfer to an ice bath to cool completely.
Chop all greens finely.
Add cooled potatoes, chopped greens, and all dressing ingredients to a large bowl and mix well.
