PINEAPPLE SUNSHINE CAKE
Ingredients:
3 eggs
1/3 cup olive oil
1/2 cup R.W. Knudsen Organic Just Pineapple juice
1 cup of chopped fresh pineapple
1 box of gluten free cake mix (I use one with an almond flour base)
1/2 cup almond flour
1 cup heavy whipping cream
1/4 cup chopped fresh pineapple
Shredded coconut for topping (optional)
Make it
Preheat oven to 350F
In a large bowl, combine eggs, olive oil, and R.W. Knudsen organic just pineapple juice. Mix.
Add cake mix and additional almond flour. Stir to combine.
Pour into a parchment lined cake pan and bake for about 35 minutes or until a fork comes out mostly clean (time will vary a little depending on your oven).
To make the whipped topping: use a hand mixer and whip the heavy whipping cream to stiff peaks, then add in the chopped pineapple. Make sure to drain any liquid from the pineapple before adding in!
