PINEAPPLE SUNSHINE CAKE

PINEAPPLE SUNSHINE CAKE 

Ingredients:

  • 3 eggs

  • 1/3 cup olive oil

  • 1/2 cup R.W. Knudsen Organic Just Pineapple juice 

  • 1 cup of chopped fresh pineapple

  • 1 box of gluten free cake mix (I use one with an almond flour base)

  • 1/2 cup almond flour 

  • 1 cup heavy whipping cream

  • 1/4 cup chopped fresh pineapple

  • Shredded coconut for topping (optional) 

Make it 

  1. Preheat oven to  350F

  2. In a large bowl, combine eggs, olive oil, and R.W. Knudsen organic just pineapple juice. Mix.

  3. Add cake mix and additional almond flour. Stir to combine. 

  4. Pour into a parchment lined cake pan and bake for about 35 minutes or until a fork comes out mostly clean (time will vary a little depending on your oven).

  5. To make the whipped topping: use a hand mixer and whip the heavy whipping cream to stiff peaks, then add in the chopped pineapple. Make sure to drain any liquid from the pineapple before adding in! 

  6. Enjoy :)
