I love this healthy apple pie oatmeal cake because, well, I love apple pie. And this is one that feels like a treat but it's actually super duper good for you. More super duper good for you than an actual apple pie could ever dream to be. So go ahead and take a second piece... and a third. ?
That pretty caramelization is thanks to our friend, maple. This recipe gets its sweetness from maple syrup and a ripe banana. No refined sugar is needed to make this taste like the flavors you love in a classic apple pie.

Ingredients for Healthy Apple Pie Oatmeal Cake
-Apples
-Rolled Oats
-Milk (non-dairy or dairy both work. I like the taste of almond milk in this bake)
-Maple syrup
-Banana
-Cinnamon + Nutmeg + Salt
To Make Healthy Apple Pie Oatmeal Cake
- Preheat oven to 350.
- Mix the oats, cinnamon, nutmeg, and salt in a bowl.
- Add in banana and mash it with a fork. It doesn't have to be completely pureed. A little bit of chunks are find and will add to the moisture of the bake.
- Add maple syrup and milk one at a time and mix until incorporated.
- Peel and chop apples into small cubes. Toss apples with a bit of cinnamon and maple syrup.
- In a pyrex or other oven safe dish, add in the oatmeal. Top with apple mixture.
- Bake for about 25 minutes or until you see bubbling at the sides.
- Enjoy.

Can this oatmeal cake be frozen?
- It sure can. Although fresh is always best, sometimes we need good food that can be popped into the oven on a busy weekday. After baking, bring it down to room temperature before freezing. To reheat: Heat in oven at 300F for about 20 minutes or until warm. You may need to add a little milk if it has dried out.
Can I use a different fruit?
- Yes! You can use banana, pear, peaches. Lots of fruit will work with this recipe.
Helpful Tips and Troubleshooting for Healthy Apple Pie Oatmeal Cake:
- Cut the apples smaller and thinner so that they cook faster. Larger, thicker chunks will take longer. Extending the time before you get to enjoy this bake, and who wants to wait longer?
